Lemon & Almond Muffins





Ingredients

  • 1/2 cups self raising flour
  • 100g almond meal
  • 3/4 cup caster sugar
  • 3 eggs
  • 1/2 cup olive oil
  • 2 lemons rind and juice
  • 1/4 cup blanched almonds

Method

  1. Preheat oven to 180C
  2. Combine flour, almond meal and sugar in a large bowl. 
  3. Beat eggs, oil, lemon rind and 1/2 cup lemon juice
  4. Add to flour mixture and stir until well combined. 
  5. Pour mixture into muffin pan. 
  6. Arrange blanched almonds on top.
  7. Bake cake for 20 minutes or until a skewer inserted into the centre comes out clean.
