- 225g (1 1/2 cups) self-raising flour
- 1/2 cup sweetener
- 250g strawberries
- 200g (3/4 cup) low-fat natural yogurth
- 60ml (1/4 cup) olive oil
- 1 egg
- Preheat oven to 200º
- Sift the flour into a large bowl. Stir in the sweetener and strawberry.
- Combine the yogurth, oil and egg.
- Pour into the centre of the flour mixture and stir until just combine.
- Devide the mixture evenly among the muffin pans.
- Bake for 25 min or until a skewer inserted into the centres comes out clean.
