Strawberry muffins

  • 225g (1 1/2 cups) self-raising flour
  • 1/2 cup sweetener
  • 250g strawberries
  • 200g (3/4 cup) low-fat natural yogurth
  • 60ml (1/4 cup) olive oil
  • 1 egg

  1. Preheat oven to 200º
  2. Sift the flour into a large bowl. Stir in the sweetener and strawberry.
  3. Combine the yogurth, oil and egg.
  4. Pour into the centre of the flour mixture and stir until just combine.
  5. Devide the mixture evenly among the muffin pans.
  6. Bake for 25 min or until a skewer inserted into the centres comes out clean.
