Blueberries thumb print cookies


 

Ingredients

  • 1½ cups plain flour
  • ⅓ cup sugar
  • ½ teaspoon baking powder
  • 1½ tablespoons oil
  • 2 eggs
  • 1 teaspoon vanilla essence
  • ½ cup of frozen blueberries

Directions

  1. Preheat oven to 180ºC and line a baking tray with baking paper
  2. In large bowl mix flour, sugar and baking powder
  3. Make a well in flour mix and put in oil, eggs and vanilla
  4. Using a fork beat eggs and combine
  5. Combine to form dough (it might be easier to use your hands), dough will be thick like a pastry
  6. Place dough in fridge for 30 mins
  7. In meantime, make filling (if using frozen, defrost fruit first)
  8. Take dough out of fridge
  9. Roll into 12 balls
  10. Place on baking tray and press each with your thumb
  11. Fill with filling
  12. Bake for 15 minutes
