Vanilla butter cake with chocolate ganache and butter-cream icing



Ingredients vanilla butter cake
  • 125g butter, softened
  • ¾ cup caster sugar
  • 1 teaspoon vanilla essence
  • 2 x 60g eggs
  • 300g self raising flour
  • ¾ cup milk
Ingredients chocolate ganache 
  • 150g Chocolate
  • 75g Cream
Ingredients butter-cream icing
  • 125g butter, softened
  • 1 1/2 cups icing sugar mixture
  • 1 tablespoon milk
Directions cake
  1. Assemble mixer using scraper beater.
  2. Using speed 4, beat butter and sugar until light and fluffy.
  3. Add vanilla essence, add eggs one at a time, beat well after each addition.
  4. Using speed 2, slowly add flour and milk alternately, to form a smooth batter.
  5. Divide mixture evenly into two lightly greased and lined 20cm round cake pans
  6. Bake in a preheated 180ºC oven for 45-50 minutes or until cooked and golden.
  7. Turn out onto wire rack to cool.
Directions chocolate ganache
  1. Bring the cream to the boil
  2. Remove from the heat and stir in the chocolate buttons
  3. Allow to cool to spreadable consistency
Directions butter-cream icing
  1. Using an electric mixer, beat butter in a bowl until pale.
  2. Gradually add icing sugar mixture and milk, beating constantly until combined.
