Ingredients vanilla butter cake
- 125g butter, softened
- ¾ cup caster sugar
- 1 teaspoon vanilla essence
- 2 x 60g eggs
- 300g self raising flour
- ¾ cup milk
Ingredients chocolate ganache
- 150g Chocolate
- 75g Cream
Ingredients butter-cream icing
- 125g butter, softened
- 1 1/2 cups icing sugar mixture
- 1 tablespoon milk
- Assemble mixer using scraper beater.
- Using speed 4, beat butter and sugar until light and fluffy.
- Add vanilla essence, add eggs one at a time, beat well after each addition.
- Using speed 2, slowly add flour and milk alternately, to form a smooth batter.
- Divide mixture evenly into two lightly greased and lined 20cm round cake pans
- Bake in a preheated 180ºC oven for 45-50 minutes or until cooked and golden.
- Turn out onto wire rack to cool.
Directions chocolate ganache
- Bring the cream to the boil
- Remove from the heat and stir in the chocolate buttons
- Allow to cool to spreadable consistency
- Using an electric mixer, beat butter in a bowl until pale.
- Gradually add icing sugar mixture and milk, beating constantly until combined.
