Almond Flour Banana Muffins. Easy, low carb, paleo and gluten free



Ingredients

  • 3 ripe bananas
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 cups almond flour
  • 1/4 cup chocolate chips

Instructions

  1. Preheat oven and prepare the muffin tin.
  2. In a food processor mix bananas, eggs, vanilla, cinnamon, baking soda, powder, salt until smooth.
  3. Add almond flour and process just enough to combine. 
  4. Add chocolate chips and stir with a spatula.
  5. Divide the mix between 8 muffins and bake for 20 - 30 minutes, or until golden brown and toothpick inserted come out clean.
  6. Remove from the oven, let cool and enjoy.
