Ingredients
- 1 cup mashed cooked sweet potato*
- 4 tablespoons melted butter
- 1 1/4 cups self raising flour
Method
- Preheat the oven to 160º
- Combine sweet potato and melted butter in a large bowl. Add the flour and mix
- Roll dough out and using a biscuit cutter cut out the biscuits.
- Place on a baking tray lined with baking paper.
- Bake in the oven until biscuits are just beginning to brown, about 20 minutes.
*Note:
To prepare the mashed sweet potato - peel the sweet potato, chop into pieces and cook in water on the hotplates/stove, steam in a steamer or cook in the microwave. Once cooked (soft when tested with a skewer), use a potato masher or fork to mash/squash the potato to as smooth as you can get it.
