- 1/2 cups self raising flour
- 100g almond meal
- 3/4 cup caster sugar
- 3 eggs
- 1/2 cup olive oil
- 2 lemons rind and juice
- 1/4 cup blanched almonds
Method
- Preheat oven to 180C
- Combine flour, almond meal and sugar in a large bowl.
- Beat eggs, oil, lemon rind and 1/2 cup lemon juice
- Add to flour mixture and stir until well combined.
- Pour mixture into muffin pan.
- Arrange blanched almonds on top.
- Bake cake for 20 minutes or until a skewer inserted into the centre comes out clean.
